Chef Ricardo is starting a local food revolution out here! My personal favorites are the Pineapple Special! I'm still calling it the "Pineapple Special" because it started off as just that! Such a big hit, we MADE RICARDO carry it permanently! First, he starts off with a whole pineapple, then whacks it in half and roasts this baby till the pineapple top starts to char. He then takes the pineapple meat and scoups it out, chops and combines it with a lightly curried rice then surronds the pineapple by hanging some of the Caribbeans largest marinated & grilled Shrimp off of the pineapple. Accompanied by a light mixed-green salad with his own homemade viniagrette dressing & some of the largest Tostones you find on the island. Believe me when I say you'll not only be glad that you got this one, but you'll also regret if you don't take a picture of it as well!
My other favorite on his menu is his BBQ'd pork chunks. Ricardo has made an amazingly delicious bbq-guava sauce that he glazes over the pork chunks as they're being grilled. Several side dishes to choose from, I typically go with Mofongo con Ajo (mashed plantains with garlic sauce). Oh my. I think I have to stop updating this web site and get over there right now!! This dish also just so happens to be one of the most reasonably priced items as well. Go figure!
How do you find it? Head out towards Luquillo. Once you're in the Rio Grande/El Yunque area, you're getting close! It's just 2 traffic lights down highway 3, once you've left our store. Make the left at the traffic light. The Kioskos are numbered 1 thru 60 (half of them are unfortunately closed) and look for Kiosko #2, La Parilla. You'll be glad you did!
